Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and position the rack in the top third of the oven for optimal cooking.
  2. Prepare the chicken: Slice each chicken breast lengthwise to create four thinner pieces. Pat them dry thoroughly with paper towels. Season both sides evenly with garlic powder, salt, and pepper.
  3. Set up dredging bowls: In three separate bowls, add the flour to the first, beat the eggs with a fork in the second, and mix panko breadcrumbs, parmesan cheese, and Italian seasoning in the third.
  4. Heat olive oil in skillet: Pour 2 tablespoons of olive oil into an oven-proof skillet and heat over medium heat while you bread the chicken.
  5. Coat the chicken: Dredge each chicken piece in flour, shaking off excess. Then dip into the beaten eggs, followed by the breadcrumb mixture, pressing gently so the coating sticks well.
  6. Pan-fry the chicken: Add two chicken pieces to the hot skillet and cook for 2 to 3 minutes per side, or until golden brown. Use tongs to carefully flip them. Transfer cooked pieces to a plate.
  7. Cook remaining chicken: Add the remaining tablespoon of olive oil to the skillet, then cook the last two pieces the same way. Once all pieces are fried, remove the skillet from heat.
  8. Finish in the oven: Arrange all four coated chicken pieces back into the skillet and transfer it to the preheated oven. Bake for 5 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Serve: Remove from the oven and serve immediately while hot and crispy.
