Chow Mein Noodles:

  • 1 lb fresh chow mein noodles

Vegetables:

  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small onion, sliced

Noodle Sauce:

  • 2 tbsp regular soy sauce
  • ½ tbsp dark soy sauce
  • 2 tbsp oyster sauce or vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • ¼ cup low-sodium chicken stock or cold water
  • ½ tbsp cornstarch or potato starch

Instructions

  1. Prepare Noodle Sauce: In a small bowl, combine all noodle sauce ingredients and set aside.
  2. Blanch Noodles: Boil water in a large pan. Blanch noodles for 20-30 seconds, then strain and set aside.
  3. Sauté Vegetables: Heat oil in a pan, sauté onions, cabbage, and celery until softened.
  4. Add Noodles and Sauce: Push veggies aside, add more oil, then noodles and sauce. Toss to coat.
  5. Finish and Serve: Remove from heat and enjoy your homemade chow mein!
