Ingredients

    Chicken Thighs:

    4 pieces, skin-on and bone-in

    Jasmine Rice:

    1 cup (about 200 grams)

    Chicken Broth:

    2 cups (about 480 ml)

    Onions:

    1 medium, diced

    Garlic:

    3 cloves, minced

    Bell Peppers:

    1 red and 1 yellow, diced

    Frozen Peas:

    1 cup (about 150 grams)

    Olive Oil:

    2 tablespoons

    Spices:

    Paprika (1 teaspoon) and dried thyme (1 teaspoon)

    Salt and Black Pepper:

    to taste

Instructions

  1. Pat the chicken thighs dry and season: Season chicken thighs with salt, black pepper, paprika, and thyme.
  2. Sear the chicken: Heat olive oil in a large pot, sear chicken thighs skin-side down until golden brown, then flip and cook for another 5 minutes. Remove from pot.
  3. Sauté onions and bell peppers: In the same pot, sauté onions and bell peppers until onions are translucent, then add garlic and cook for 1 minute.
  4. Add rice and broth: Stir in jasmine rice, toast for 2 minutes, then add chicken broth and combine. Return chicken thighs to the pot.
  5. Simmer: Cover and simmer on low for 20-25 minutes. Sprinkle frozen peas on top, cover, and steam for an additional 5 minutes.
  6. Rest and garnish: Let sit covered for 5 minutes, fluff rice, and garnish with fresh parsley if desired.
