Ingredients

Scale

Main Ingredients

  • 1 cup pecans (120g)
  • 1 cup dates (Medjool or regular, chopped, 160g)
  • 2 cups shredded carrots (220g)
  • 1/2 teaspoon cinnamon (1.3g)
  • 1/2 teaspoon nutmeg (1.1g)
  • 1/4 teaspoon sea salt (1.4g)
  • 1 cup shredded coconut flakes (80g – divided: 40g in mixture, 40g for rolling)
  • 1/4 cup raisins (40g)

Instructions

  1. Combine Ingredients: Add the pecans, dates, shredded carrots, cinnamon, nutmeg, sea salt, half of the shredded coconut flakes, and raisins to your food processor. Pulse everything together until the mixture begins to form a dough-like consistency, about 1 minute. Scrape down the sides as needed to ensure even blending.
  2. Form Balls: Using a sheet of cling-film (Saran Wrap), scoop and shape the mixture into round balls by wrapping and rolling. Alternatively, you can dampen your hands to roll the mixture into balls without cling-film. Continue until all the mixture is used.
  3. Coat Bites: Roll the formed balls in the remaining shredded coconut flakes, coating them evenly to add texture and flavor.
  4. Chill: Place the energy bites in the refrigerator for at least one hour to set properly. This helps them firm up and improves the texture before serving.
  5. Serve and Enjoy: Once set, your No Bake Carrot Cake Energy Bites are ready to enjoy as a nutritious snack or a sweet treat.

Notes

  • You can substitute pecans with walnuts or almonds if preferred.
  • Medjool dates bring more sweetness and moisture than regular dates.
  • Keep the bites refrigerated and consume within one week for optimal freshness.
  • For a smoother texture, pulse the mixture longer but avoid over-processing.
  • These energy bites are naturally gluten-free and vegetarian.
