Mosaiko, also known as Greek Chocolate Salami, is a no-bake dessert combining crushed animal crackers, walnuts, and a rich chocolate mixture with a meringue base. This sweet treat is shaped like a salami log, dusted with powdered sugar for an authentic look, and chilled until firm. Perfect served in slices alongside coffee or vanilla ice cream.

Dry Ingredients

  • 12 oz plain animal crackers
  • 2 oz walnut pieces
  • 2 cups powdered sugar (divided)
  • 3 tbsp cocoa powder

Wet Ingredients

  • 1 cup butter (melted)
  • 2 large eggs, separated (preferably pasteurized)
  • 2 tsp vanilla extract
  • 1 tsp orange extract or cognac

Instructions

  1. Crush Cookies and Walnuts: Place the plain animal crackers and walnut pieces into a sealable plastic bag. Use a rolling pin to crush them into smaller pieces. Set aside. Line a baking tray with plastic wrap, leaving an inch or two of overhang, and set aside.
  2. Separate Eggs: Separate the egg whites from the yolks. Set the yolks aside for later use. Add the egg whites and salt into a mixing bowl.
  3. Whisk Egg Whites: Using a mixer at medium speed, whisk the egg whites until they become white and foamy. Gradually sprinkle in 1/2 cup of the powdered sugar while whisking until the mixture thickens and becomes glossy, forming a meringue.
  4. Prepare Chocolate Mixture: Melt the butter either in the microwave or over low heat in a saucepan. Remove from heat and stir in the remaining 1 1/2 cups powdered sugar, cocoa powder, orange extract (or cognac), and vanilla extract until well combined. Next, whisk in the egg yolks until the mixture is smooth.
  5. Combine Mixtures: Carefully add the chocolate mixture to the egg white meringue. Using a spatula, gently fold the mixtures together with light circular motions until partially combined. Then add the crushed cookies and walnuts and mix thoroughly to combine all ingredients.
  6. Shape the Salami: Pour the mixture onto the lined baking tray, positioning it down the center lengthwise. Shape the mixture into a long strip or divide into two strips. Pull the sides of the plastic wrap up and over the mixture, creating a wrapped roll resembling a salami.
  7. Chill and Firm Up: Place the wrapped roll in the freezer for 30 minutes. After that, remove and reshape if it has flattened into a longer log. Return it to the refrigerator or freezer and let set for another 90 minutes until firm.
  8. Serve: Remove the plastic wrap and dust the chocolate salami generously with powdered sugar to create the classic salami look. Slice thickly and serve with coffee or a scoop of vanilla ice cream. Store any leftovers wrapped in the refrigerator.
