This Mexican Street Corn Dip is a creamy and flavorful appetizer inspired by the popular street snack, elote. Loaded with corn, Cotija cheese, and a zesty lime kick, this dip is perfect for parties or gatherings.

Corn Dip:

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 2 Tablespoons salted butter
  • ½ cup mayonnaise
  • 3 Tablespoons sour cream
  • Juice of half a lime
  • 1 teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ⅔ cup crumbled Cotija cheese

For Serving:

  • 1 Tablespoon minced fresh cilantro

Instructions

  1. COOK CORN: Melt butter in a large skillet over medium-high heat. Add the corn kernels and sauté for 8-10 minutes until the kernels begin to slightly brown and caramelize. Remove from heat and allow to cool for 10 minutes.
  2. MAKE DIP: Stir in the mayonnaise, sour cream, lime juice, garlic powder, and cayenne pepper until well combined. Set aside a couple tablespoons of the Cotija cheese and mix the rest into the corn mixture.
  3. TO FINISH: Transfer the corn dip to a serving bowl and garnish with the remaining Cotija cheese and fresh cilantro.

Notes

  • This dip can be served warm or cold, depending on your preference.
  • For a spicier kick, add more cayenne pepper or some chopped jalapeños.
