Instructions

  1. Beat the Eggs: In a bowl or measuring cup, thoroughly beat together the eggs, kosher salt, and ground black pepper until well combined and slightly frothy.
  2. Sauté Onions: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced yellow onion and sauté for 2 to 3 minutes, stirring occasionally until they become soft and translucent.
  3. Add Vegetables: Stir in the diced roma tomato, red bell pepper, and thinly sliced serrano chile. Cook the mixture for another 3 minutes, allowing the vegetables to soften and their flavors to meld.
  4. Cook Eggs and Add Cheese: Pour the beaten egg mixture over the sautéed vegetables in the skillet. Sprinkle the feta cheese crumbles evenly on top. Reduce the heat to low and gently stir occasionally, cooking the eggs slowly until they are just about set. Remove the skillet from the heat as the eggs will continue to cook from residual heat.
