Mackerel Wrap Ingredients

  • 1 (15 oz) can Chicken of the Sea® Mackerel in Water, drained, bones and skin removed
  • 4 tortilla wraps (flavored or gluten free)
  • 8 slices provolone cheese
  • 1/4 cup creamy balsamic dressing
  • 1 cup cherry tomatoes, halved
  • 2 Tablespoons crumbled peppercorn feta cheese
  • 2 Tablespoons fresh chopped herbs (parsley, thyme, or marjoram)
  • Extra virgin olive oil, for brushing
  • 2 Tablespoons grated Parmesan cheese

Instructions

  1. Preheat Broiler: Preheat your oven’s broiler to prepare for melting the cheese and warming the wraps.
  2. Prepare Mackerel: Flake the drained mackerel into bite-sized pieces, removing any bones and skin; set aside.
  3. Assemble Wraps: Place each tortilla wrap on a foil-lined baking sheet pan. Lay two slices of provolone cheese in the center of each tortilla, then layer flaked mackerel over the cheese.
  4. Add Dressing and Toppings: Drizzle creamy balsamic dressing evenly over the mackerel, then top with halved cherry tomatoes. Sprinkle half a tablespoon each of crumbled feta cheese and fresh chopped herbs on top.
  5. Fold and Prepare for Broiling: Fold each wrap from right to left to enclose the filling. Brush the tops of the wraps with extra virgin olive oil and sprinkle half a tablespoon of grated Parmesan cheese over each.
  6. Broil: Place the prepared wraps under the broiler for about 1 minute, or until the cheese has melted and the wraps are lightly golden.
  7. Serve: Remove from the oven and serve immediately while warm and melty.
