Ingredients

Scale

Crust

  • 11 graham crackers (one entire sleeve)
  • stick butter, melted
  • 2 tbsp granulated sugar

Cheesecake

  • 32 oz cream cheese, softened (four blocks)
  • ½ cup heavy whipping cream
  • 1 cup granulated sugar
  • ½ cup powdered sugar
  • 4 oz vanilla instant pudding mix
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 box Frosted Flakes with Lucky Charms Marshmallows

Decoration

  • 1 can vanilla frosting (chilled)

Instructions

  1. Prepare the Crust: Place the graham crackers in a blender or food processor and pulse until it forms fine crumbs. Transfer the crumbs to a bowl, add the granulated sugar and melted butter, and stir well to coat all crumbs evenly.
  2. Form the Crust: Line a 7-inch springform pan with parchment paper. Pour the graham cracker mixture into the pan and press firmly and evenly into the base and slightly up the sides using the back of a spoon, making sure the crust is compact and level.
  3. Freeze the Crust: Place the crust in the freezer to firm up while you prepare the cheesecake filling.
  4. Mix Cheesecake Batter: In a stand mixer bowl, add the softened cream cheese, heavy whipping cream, and vanilla instant pudding mix. Blend on low speed until combined.
  5. Add Sweeteners and Flavorings: Add granulated sugar, powdered sugar, vanilla extract, and lemon juice to the mixer. Mix on medium speed until blended thoroughly.
  6. Beat Until Smooth: Increase mixer speed to high and whip the batter until it becomes smooth and creamy. Stop to scrape down sides of the bowl and blend again on high until fully smooth.
  7. Incorporate Lucky Charms Marshmallows: Pour the Lucky Charms frosted flakes cereal into a large bowl. Carefully pick out about 20 to 30 colorful marshmallows and a few flakes. Gently fold these marshmallows and flakes into the cheesecake batter with a spoon to keep the marshmallows intact.
  8. Chill Frosting: Place the can of vanilla frosting in the refrigerator to chill until ready to decorate the cheesecake.
  9. Assemble the Cheesecake: Remove the crust from the freezer. Pour the cheesecake batter evenly over the crust and smooth the surface with a spatula or spoon.
  10. Freeze Cheesecake: Return the springform pan with the assembled cheesecake to the freezer. Let it chill for at least 2 hours, preferably overnight, to fully set.
  11. Decorate the Cheesecake: When ready to serve, remove the cheesecake from the freezer and release the springform pan sides. Transfer frosting to a piping bag fitted with a large star tip and pipe large dollops around the cake’s edges.
  12. Add Final Toppings: Generously sprinkle leftover Lucky Charms marshmallows and frosted flakes over the top of the cheesecake and frosting dollops, ensuring colorful marshmallows are placed attractively on the frosting for a vibrant presentation.
  13. Serve: Cut the cheesecake into 2 to 3-inch wide slices, serve, and enjoy this whimsical, creamy dessert.

Notes

  • Ensure the cream cheese is softened at room temperature to achieve a smooth batter without lumps.
  • Freezing the crust and cheesecake helps the dessert set properly since it is not baked.
  • You can substitute the vanilla instant pudding with homemade vanilla pudding if preferred, but the instant mix helps with firm texture.
  • For best presentation, carefully separate marshmallows from the cereal to preserve their shape.
  • This cheesecake is best served chilled and can be stored in the freezer covered for up to a week.
  • Use a sharp knife dipped in hot water and wiped dry to cut cleaner slices.
