Ingredients

Vegetables

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 garlic cloves, minced

Legumes & Canned Goods

  • 1 cup green or brown lentils
  • 1 can (14.5 oz) diced tomatoes

Liquids

  • 4 cups vegetable broth
  • 1 tbsp olive oil

Herbs & Spices

  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until they are softened and slightly translucent, about 5 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant, making sure not to burn it.
  3. Add Lentils and Liquids: Add the lentils, vegetable broth, diced tomatoes (with their juices), bay leaf, and thyme to the pot. Stir to combine all ingredients.
  4. Simmer: Bring the mixture to a boil, then reduce heat to low. Cover and simmer gently for about 30 minutes, or until the lentils are tender and the vegetables are cooked through.
  5. Season and Serve: Season the soup with salt and pepper according to your taste. Remove the bay leaf before serving. Ladle the soup into bowls and enjoy warm.
