Cream Cheese Mixture:

  • 8 ounces cream cheese, softened to room temperature
  • ½ cup powdered sugar

Lemon Fluff:

  • 8 ounces whipped topping, thawed
  • 1 lemon, juiced
  • ¼ teaspoon lemon extract (optional, for extra lemon flavor)
  • 3 cups mini marshmallows
  • 18 ounces fresh blueberries

Optional Garnishes:

  • Fresh lemon slices
  • Fresh mint leaves

Instructions

  1. Cream Cheese Mixture: In a large bowl, blend the cream cheese and powdered sugar with a hand mixer until creamy.
  2. 8 ounces cream cheese, ½ cup powdered sugar

  3. Lemon Fluff: Add lemon juice and optional lemon extract to the cream cheese mixture, then gently fold in the whipped topping.
  4. 8 ounces whipped topping, 1 lemon, ¼ teaspoon lemon extract

  5. Stir in the blueberries and marshmallows until coated with the cream cheese mixture.
  6. 3 cups mini marshmallows, 18 ounces fresh blueberries

  7. Cover and chill in the refrigerator for 30 minutes to an hour to allow flavors to meld.
  8. Garnish with additional blueberries, lemon slices, and mint leaves before serving.

Notes

  • For a lighter version, you can use low-fat cream cheese and whipped topping.
