Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 58 drops yellow food coloring (optional)

For Rolling:

  • 1/4 cup sugar
  • 3/4 cup powdered sugar (icing sugar or confectioners sugar)

Instructions

  1. Dry Ingredients: In a large bowl, mix together flour, salt, and baking soda. Set aside.
  2. Wet Ingredients: In the bowl of a stand mixer, beat butter and sugar until fluffy. Add egg, lemon juice, lemon zest, vanilla extract, and food coloring; mix to combine.
  3. Slowly add dry ingredients to the stand mixer and mix until incorporated. Cover the bowl with plastic wrap and refrigerate for 2 hours.
  4. Preheat oven to 350°F and line 2 baking sheets with parchment paper.
  5. Scoop dough into balls, roll in regular sugar, then powdered sugar. Place on baking sheets, 2 inches apart.
  6. Bake for 10-12 minutes. Allow to cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
