Ingredients

Scale

Chicken

  • 3 chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Salad

  • 2 boiled eggs, peeled and chopped
  • 1/2 cup Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp fresh lemon juice
  • 1 stalk celery, diced
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of salt and black pepper
  • Sweet Gem lettuce for serving

Instructions

  1. Prepare the Chicken: Preheat your oven to 350°F (180°C). Place the chicken breasts on a baking tray, season them generously with salt and black pepper, then drizzle and rub with olive oil to coat evenly.
  2. Bake the Chicken: Bake the chicken breasts in the oven for 30 minutes or until fully cooked and no longer pink in the center. Remove from oven and allow to cool slightly.
  3. Shred the Chicken: Once cooled, shred the chicken breasts using two forks to pull the meat apart into bite-sized pieces.
  4. Make the Salad Mixture: In a mixing bowl, combine the chopped boiled eggs, Greek yogurt, Dijon mustard, fresh lemon juice, diced celery, chopped dill, garlic powder, onion powder, and a pinch of salt and black pepper. Mix well to integrate all ingredients.
  5. Combine Chicken with Salad: Add the shredded chicken to the salad mixture and thoroughly mix until all ingredients are well combined.
  6. Serve: Spoon the chicken salad mixture onto fresh Sweet Gem lettuce leaves and enjoy immediately for a refreshing, keto-friendly meal.

Notes

  • Ensure chicken breasts are cooked to an internal temperature of 165°F (74°C) for safety.
  • Greek yogurt can be substituted with mayonnaise for a richer texture, but it may affect the carb count.
  • Sweet Gem lettuce can be replaced with any crisp lettuce or leafy greens of choice.
  • Perfect for meal prepping—store chicken salad separately from lettuce to keep leaves crisp.
  • Adjust seasoning to taste, adding more lemon juice or mustard if desired.
