Ingredients

Scale

For the Burger Filling

  • 1 pound minced beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped dill pickles

For the Quesadilla

  • 4 large tortillas (10 inches)
  • 2 cups shredded cheddar cheese

For the Special Sauce

  • 1/2 cup mayo
  • 2 tablespoons ketchup
  • 2 tablespoons finely chopped pickles
  • 1 tablespoon finely diced onion
  • 2 teaspoons white vinegar

Instructions

  1. Preheat the Grill and Brown the Ground Beef: Begin by preheating your Blackstone Grill to medium-high heat, approximately 400 degrees F. Once the grill is hot, add the ground beef and brown it until it’s no longer pink and fully cooked through. Season the beef generously with salt and pepper to enhance its flavor as it cooks.
  2. Prepare the Special Sauce: While the beef is browning, take this time to prepare the special sauce. In a mixing bowl, stir together mayo, ketchup, finely chopped pickles, diced onion, and white vinegar until the ingredients are well combined and the flavors meld together. Set the sauce aside for assembling your quesadillas.
  3. Assemble the Quesadillas: Place the tortillas directly onto the Blackstone Grill. On one half of each tortilla, spread a generous amount of the prepared special sauce. Next, top the sauce with the browned ground beef, some chopped dill pickles for a tangy crunch, and finally, a layer of shredded cheddar cheese for that gooey, cheesy goodness.
  4. Cook the Quesadillas: Once filled, fold the tortillas in half to create a quesadilla. Cook each quesadilla until the bottom is golden brown, which should take about 2-3 minutes. Carefully flip them over and continue cooking for an additional 2-3 minutes until the other side is golden brown and the cheese inside has melted.
  5. Slice and Serve: Remove the quesadillas from the Blackstone Grill once they are cooked to perfection. Use a sharp knife or pizza cutter to slice each quesadilla into 4 pieces. Serve them warm and enjoy your delicious creation!

Notes

  • Make sure not to overfill the quesadillas to prevent the filling from spilling out during cooking.
  • Use a spatula to gently press the quesadilla down while cooking for a crispier crust and better melting of cheese.
  • For extra flavor, add some diced jalapeños or a pinch of smoked paprika to the beef while cooking.
  • If you don’t have a Blackstone Grill, a regular cast-iron skillet or griddle will work as well.
  • Serve with your favorite dipping sauces or a side of salsa for added zest.
