A delicious and spicy twist on traditional chicken salad, this Jalapeño Popper Chicken Salad is packed with flavor from jalapeños,turkey bacon, and a creamy mayo mixture.

For the Chicken:

  • 2 boneless skinless chicken breasts

For the Salad:

  • 5 strips of turkey bacon
  • 3 jalapeños
  • 1/2 cup mayonnaise
  • 1/4 cup green onion
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions

  1. Cook the Chicken: Place chicken breasts in a saucepan, cover with cold water, bring to a boil, then simmer for 14 minutes. Shred the chicken.
  2. Prepare the turkey Bacon and Jalapeños: Fry  turkey bacon until crispy. Deseeed and slice jalapeños, sauté in oil with salt until soft.
  3. Combine Ingredients: Chop turkey bacon, mix with shredded chicken, mayo mixture, and sautéed jalapeños.
  4. Enjoy: Serve immediately or refrigerate for up to 4 days.

Notes

  • If desired, leave some jalapeño seeds for extra heat.
