  • ¾ cup vegetable oil (or melted butter for a richer taste)
  • 3 large eggs
  • 1 cup fresh orange juice
  • 1 teaspoon vanilla extract

  • ¼ cup raisins
  • 1 tablespoon grated orange zest

Instructions

  1. Prepare the Batter – Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan or two 9-inch round cake pans and line them with parchment paper. In a large mixing bowl, whisk together the honey, oil, eggs, and vanilla extract until smooth. Stir in the orange juice and mix well.
  2. Combine Dry and Wet Ingredients – In a separate bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon. Slowly fold the dry mixture into the wet ingredients, stirring gently until just combined. If using nuts or raisins, fold them in last.
  3. Bake the Cake – Pour the batter evenly into the prepared pan(s). Bake for 40-45 minutes, or until the top is golden brown and a skewer inserted in the middle comes out clean. Allow the cake to rest in the pan for about 10 minutes, then carefully remove it and let it cool completely on a wire rack.
