  • 2 ribs celery, diced
  • 34 large carrots, diced
  • 1 clove garlic, minced
  • 10 cups chicken stock or broth*

  • 1/2 teaspoon freshly ground black pepper, to taste
  • 1/8 teaspoon dried rosemary (or more, to taste)
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes

Additional:

  • 1 batch homemade egg noodles (or 4 cups dry egg noodles, farfalle, or other bite-size pasta)
  • 3 cups rotisserie chicken, shredded
  • 1 teaspoon Better Than Bouillon chicken flavor (or more, as needed), or chicken bouillon granules

Instructions

  1. Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced celery, carrots, and minced garlic. Sauté for 5–7 minutes, until the vegetables begin to soften.
  2. Prepare the Broth: Add the chicken stock or broth to the pot. Stir in the salt, black pepper, rosemary, thyme, and crushed red pepper flakes. Bring the mixture to a boil, then reduce the heat to a simmer.
  3. Cook the Noodles: Add the homemade egg noodles (or your choice of pasta) to the simmering broth. Cook according to the pasta’s package instructions or until the noodles are tender.
  4. Add the Chicken: While the noodles are cooking, shred the rotisserie chicken into bite-sized pieces. Add the chicken to the soup once the noodles are nearly done.
  5. Season the Soup: Stir in the Better Than Bouillon chicken flavor (or chicken bouillon granules) to enhance the flavor of the broth. Taste the soup and adjust the seasoning with additional salt, pepper, or bouillon if desired.
  6. Serve: Once everything is well combined and heated through, serve the soup hot. Optionally, garnish with fresh herbs or a squeeze of lemon for extra brightness.
