Instructions

  1. Whisk Eggs: In a bowl, whisk the eggs thoroughly with salt and pepper until the mixture is uniform and slightly frothy.
  2. Add Vegetables: Stir in the chopped green onions and carrots into the egg mixture, mixing evenly.
  3. Heat Pan: Place a 10-inch non-stick pan on low heat and add 1 tsp of neutral oil, spreading it evenly.
  4. First Layer: Pour approximately one-third of the egg mixture into the pan, spreading it evenly. As the edges set, lift them gently with a spatula or rice paddle and begin rolling the omelette when the top is nearly set but slightly runny.
  5. Add Next Layer: Pull the rolled omelette to the opposite side of the pan. Tilt the pan to let some of the remaining egg mixture fill in the empty spaces around the roll, ensuring an even layer. Pour in another one-third of the egg mixture.
  6. Roll Again: When the new egg layer is nearly set, roll the omelette again by lifting the edges and rolling towards the other side of the pan.
  7. Final Layer: Repeat the process by tilting the pan, pouring in the last one-third of the egg mixture, and rolling one final time until the omelette is fully formed.
  8. Seal Edges: If the omelette ends on a short side, use a spatula and hand to hold it gently on the pan to seal the roll properly.
  9. Rest and Slice: Remove the omelette from the pan and let it rest on a cool surface for a couple of minutes. Slice into 6 to 8 even pieces. Trim tapered ends if necessary.
  10. Serve or Store: Serve immediately or allow it to cool completely before storing for later consumption.
