  • 3 Tbsp low sodium soy sauce
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt, more or less to taste
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (adjust to taste)
  • 1 tsp rice vinegar
  • 2 tsp honey

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Taste and adjust the heat or sweetness by adding more sriracha or honey as preferred. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey and break it into small pieces using a spatula. Cook until browned and the internal temperature reaches 165°F, about 6-8 minutes.
  3. Season the Turkey: Reduce heat to medium-low. Add minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir well to combine and let simmer for 2-3 minutes, stirring occasionally.
  4. Thicken Sauce: Sprinkle corn starch evenly over the turkey mixture. Stir thoroughly to distribute and thicken the sauce, cooking for another 1-2 minutes. Optionally, stir in 2 tablespoons of the prepared bang bang sauce into the turkey mixture for extra flavor.
  5. Assemble Bowls: In individual bowls, layer cooked rice and your choice of vegetables such as shredded carrots, cucumbers, edamame, pickled onions, avocado, and shredded cabbage. Spoon the warm ground turkey mixture over the rice and veggies. Drizzle generously with bang bang sauce and garnish with sliced green onions and sesame seeds. Serve immediately.
