Ingredients

Scale

Vegetables

  • 2 medium sweet potatoes, peeled and diced
  • 1 yellow onion, diced
  • 1 avocado, sliced

Meat and Dairy

  • 1 lb lean ground beef (93% lean preferred)
  • 1 cup cottage cheese (low-fat or full-fat)

Seasonings and Condiments

  • 1 taco seasoning packet (or 2 tbsp homemade taco seasoning)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Oils

  • 2 tbsp olive oil, divided

Instructions

  1. Prep and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread the sweet potatoes on a baking sheet in a single layer and roast for 40 to 45 minutes, stirring halfway through to ensure even cooking. The sweet potatoes should become tender and slightly caramelized.
  2. Cook Ground Beef and Onions: While the sweet potatoes roast, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the diced yellow onion and sauté until softened and translucent, about 4-5 minutes. Add the lean ground beef to the skillet, sprinkle the taco seasoning over it, and cook until the beef is browned and cooked through, breaking it apart with a spatula for even cooking. This should take about 8-10 minutes.
  3. Assemble Bowls: Once the sweet potatoes and ground beef are ready, assemble your bowls by layering the roasted sweet potatoes, cooked ground beef mixture, sliced avocado, and dollops of cottage cheese in each bowl.
  4. Add Hot Honey and Garnish: Drizzle the spicy hot honey over each bowl to add a perfect balance of sweetness with a kick of heat. Optionally, garnish your bowls with chopped cilantro, a sprinkle of red pepper flakes, or a wedge of lime for extra freshness and flavor enhancement.

Notes

  • For a homemade taco seasoning, combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  • Roast sweet potatoes evenly by turning them halfway through cooking to avoid burning.
  • Adjust the amount of hot honey based on your preferred spice level.
  • You can substitute cottage cheese with Greek yogurt or sour cream if preferred.
  • This bowl is easily customizable with additional toppings such as chopped cilantro, jalapeños, or a squeeze of lime.
  • Store leftovers covered in the refrigerator for up to 3 days.
