Ingredients

Scale

For the Beef

  • 1 lb ground beef (90% lean recommended)
  • 2 tsp taco seasoning (store-bought or homemade)

For the Base

  • 2 cups cooked rice (white, brown, jasmine, basmati, or cauliflower rice)

For the Beans and Corn

  • 1 cup black beans (drained and rinsed if canned)
  • 1 cup corn kernels (fresh, canned and drained, or thawed frozen)

For the Toppings

  • Salsa, to taste
  • Guacamole, to taste
  • Shredded cheese, to taste
  • Fresh cilantro leaves, for garnish

Instructions

  1. Cook the Ground Beef: Heat a large skillet over medium-high heat. If your ground beef is lean, add a teaspoon of oil to prevent sticking. Add the ground beef and use a spatula to break it into crumbles. Sprinkle 2 teaspoons of taco seasoning over the beef as it begins to brown. Stir frequently until the beef is fully cooked and no pink remains, about 7–10 minutes. Drain any excess fat if necessary and remove from heat.
  2. Prepare the Rice: Choose your preferred rice variety—white, brown, jasmine, basmati, or cauliflower rice. Cook according to package instructions, typically by boiling until tender and liquid is absorbed. Once cooked, fluff the rice with a fork and keep warm until ready to assemble.
  3. Prepare Beans and Corn: Rinse canned black beans and corn under cold water to remove excess sodium. Optionally, warm them in a saucepan or microwave if you prefer a hot burrito bowl component. Keep ready for assembly.
  4. Assemble the Bowls: Spoon 2 cups of cooked rice into each serving bowl as a base. Top the rice evenly with cooked ground beef. Scatter 1 cup each of black beans and corn kernels over the beef layer. Finish by adding desired amounts of salsa, guacamole, shredded cheese, and fresh cilantro leaves. Serve immediately to enjoy warm beef and rice with melting cheese.

Notes

  • Choose 90% lean or higher ground beef for a healthier, less fatty dish.
  • Feel free to substitute ground turkey or chicken for a lighter protein option.
  • Homemade taco seasoning can be made with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to reduce sodium.
  • Rinse canned beans and corn thoroughly to reduce excess salt.
  • Other garnishes like diced tomatoes, sliced jalapeños, or shredded lettuce can be added for extra flavor and texture.
  • Use your favorite type of rice or try cauliflower rice for a low-carb alternative.
