Ingredients

Scale

Chicken

  • 2 pounds boneless chicken breasts
  • Kosher salt, to taste
  • Ground pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil (for cooking chicken)

Creamy Garlic Sauce and Vegetables

  • 1 1/2 cups almond milk (or any preferred milk)
  • 1 tablespoon gluten-free flour (or any flour)
  • 45 cloves garlic, minced
  • 1 medium head broccoli, chopped (about 3 cups)
  • 1 tablespoon olive oil (for sauce and broccoli)
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges (optional, for serving)

Instructions

  1. Season the chicken: Rub the boneless chicken breasts evenly with kosher salt, ground pepper, and Italian seasoning on all sides to ensure full flavor penetration.
  2. Prepare the sauce mixture: In a small bowl, whisk together almond milk and gluten-free flour until smooth with no lumps, then set aside to use later.
  3. Cook the chicken: Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until they are golden-brown and cooked through. Once done, remove from the pan, cover, and keep warm.
  4. Sauté garlic: In the same pan, add the remaining 1 tablespoon olive oil and heat over medium heat. Add minced garlic cloves and sauté for up to 1 minute until fragrant but not browned.
  5. Add sauce and broccoli: Pour the almond milk and flour mixture into the pan with garlic, stirring continuously as the sauce thickens almost immediately upon heating. Then add the chopped broccoli florets and cook for 6-8 minutes until the broccoli is tender.
  6. Reheat chicken and finish: Return the cooked chicken breasts to the pan with the sauce and broccoli, cooking for an additional couple of minutes to heat through and meld the flavors.
  7. Serve: Garnish with fresh chopped parsley and optionally serve with lemon wedges for a bright, fresh finish.

Notes

  • You can substitute almond milk with any preferred milk, such as dairy or oat milk, depending on your dietary needs.
  • Use gluten-free flour to keep the recipe gluten-free or any preferred flour for thickening the sauce.
  • If you want a spicier sauce, add a pinch of crushed red pepper flakes when sautéing the garlic.
  • Serve over cooked grains like rice or quinoa if desired for a more filling meal.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
