Ingredients

Scale

For the Crust

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup melted butter

For the Filling

  • 1 (3 oz.) package watermelon Jello
  • 1/4 cup water
  • 2 cups watermelon, cut into small cubes
  • 2 (8 oz.) tubs Cool Whip (whipped topping)

For Garnish

  • Remaining 1/2 tub Cool Whip
  • Watermelon slices

Instructions

  1. Prepare the crust: In a mixing bowl, combine graham cracker crumbs and sugar. Add the melted butter and stir until the mixture is evenly moistened. Press the crumb mixture firmly into the bottom of a pie dish to form an even crust layer.
  2. Dissolve the Jello: Boil the 1/4 cup water and pour it into a bowl containing the watermelon Jello powder. Stir continuously until the Jello powder has completely dissolved. Allow the mixture to cool completely at room temperature.
  3. Mix the filling: Pour the cooled Jello liquid into a large bowl. Add 1 and a half tubs of Cool Whip to the Jello and mix well until fully incorporated and fluffy.
  4. Add watermelon cubes: Gently fold the small cubes of fresh watermelon into the Jello and Cool Whip mixture, ensuring even distribution without breaking the cubes.
  5. Assemble the pie: Spoon the Jello and watermelon filling into the prepared graham cracker crust, smoothing the top with a spatula.
  6. Chill the pie: Refrigerate the pie for at least 3 hours, or until it is set and firm.
  7. Garnish and serve: Before serving, decorate the top of the pie with the remaining Cool Whip and fresh watermelon slices for an attractive presentation.

Notes

  • You may use a pre-made store-bought graham cracker crust instead of making your own crust.
  • Ensure the Jello mixture is completely cool before adding Cool Whip to prevent it from melting and losing fluffiness.
  • For extra freshness, chill the watermelon cubes before folding them into the filling.
  • This pie is best served within 24 hours for optimal texture and freshness.
