Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, sift the flour, then add the instant yeast, kosher salt, and sugar. Mix everything well to ensure even distribution of ingredients.
  2. Add Water and Form Dough: Pour in the water and mix until the dough just comes together. Transfer the dough into a stand mixer fitted with a dough hook and knead on medium-high speed for 8 to 10 minutes until the dough becomes soft and elastic.
  3. First Rise: Cover the dough with a towel and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  4. Divide and Shape: Punch down the risen dough to release air. Transfer it onto a clean, floured surface and divide it into two equal portions. Shape each portion into a smooth ball.
  5. Roll Out Dough Balls: Using a rolling pin, roll each dough ball into a circular shape. Cover the dough circles with a towel and allow them to rest for 20 to 30 minutes. Meanwhile, preheat your oven to its highest temperature, approximately 225°C (440°F).
  6. Prepare Egg Wash: In a small bowl, whisk together the egg yolk, yogurt, and water until smooth to create a glossy egg wash.
  7. Create Dough Indents: Press your fingertips gently around the edge of each dough circle to make indentations, then continue to make 3 to 4 rows of indents inside the circle to give the bread its classic look.
  8. Apply Egg Wash and Seeds: Brush the prepared egg wash evenly over the surface of each dough circle. Sprinkle sesame seeds and nigella seeds on top for flavor and texture.
  9. Bake: Place the dough rounds on a baking tray and bake in the preheated oven’s middle rack for 15 to 20 minutes, or until the bread turns golden brown and is baked through. Be careful not to overbake to avoid drying out the bread.
