Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • ¼ cup water

Additional Filling

  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrap and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: Brown the ground beef in a skillet over medium heat until fully cooked, about 8–10 minutes. Drain any excess grease to avoid a greasy filling. Add the taco seasoning packet along with ¼ cup of water and stir well. Let the mixture simmer for 5 minutes to allow the flavors to meld and the sauce to thicken.
  2. Warm the Tortillas: To ensure your tortillas are flexible and easy to roll, heat them briefly in a dry skillet over medium heat for about 20 seconds on each side or microwave them covered with a damp paper towel for 30 seconds.
  3. Assemble the Burrito: Lay one warmed tortilla flat on a clean surface. Begin by layering approximately ¼ cup of cooked white rice in the center, then add a generous portion of the seasoned beef, followed by 2 tablespoons each of nacho cheese sauce and chipotle sauce. Dollop 1 tablespoon of sour cream over the filling, then sprinkle with a mix of shredded cheddar and mozzarella cheese to ensure gooey cheesiness.
  4. Grill the Burrito: Heat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese directly onto the pan. Place the assembled burrito seam-side down onto the melting cheese to help seal the burrito and create a crispy, cheesy crust. Cook for 3 to 4 minutes until the cheese is melted and the bottom is golden and crisp. Carefully flip the burrito and grill the other side for another 3 to 4 minutes until similarly crispy and the cheese inside is melted.

Notes

  • Use homemade taco seasoning to control salt and spice levels if preferred.
  • Substitute sour cream with a dairy-free alternative for a lactose-free version.
  • For extra crispness, brush the tortillas lightly with butter before grilling.
  • Warm tortillas help prevent tearing during assembly.
  • Adjust chipotle sauce quantity to taste depending on your preferred spice level.
  • Leftover grilled burritos can be refrigerated and reheated in a skillet or oven for best texture retention.
