  • 1 15 oz can whole kernel corn (drained)

  • ½ cup chicken broth

Instructions

  1. Prepare the Slow Cooker: Place the boneless, skinless chicken breasts into the Crock Pot or slow cooker in an even layer.
  2. Add Beans and Vegetables: Add the drained and rinsed black beans, drained corn, and the entire can of Rotel diced tomatoes and green chilies (do not drain) over the chicken breasts.
  3. Season the Mix: Sprinkle the onion powder, dry ranch dressing packet, and ground black pepper evenly on top of the ingredients in the slow cooker.
  4. Add Lime and Broth: Squeeze fresh lime juice over the mixture, then pour the ½ cup of chicken broth on top to add moisture and enhance flavor.
  5. Place Cream Cheese: Lay the block of plain cream cheese on top of all the ingredients without stirring it in yet. This will melt slowly during cooking.
