A hearty and flavorful Easy Cheeseburger Soup recipe that will warm you up on chilly days. This soup combines the classic flavors of a cheeseburger in a comforting bowl of goodness.

Ingredients

Ground Beef:

1⁄2 pound

Butter:

4 tablespoons, divided

Carrots:

3⁄4 cup, diced

Celery:

3⁄4 cup, diced

Onion:

3⁄4 cup, diced

Dried Basil:

1 teaspoon

Dried Parsley:

1 teaspoon

Potatoes:

4 cups, diced

Chicken Broth:

3 cups

All-Purpose Flour:

1⁄4 cup

Velveeta:

1 to 2 cups, cubed

Whole Milk:

1 1⁄2 cups

Salt:

3⁄4 teaspoon

Black Pepper:

1⁄4 to 1/2 teaspoon

Sour Cream:

1⁄4 cup

Optional Toppings:

Onion rings, green onions, crumbled bacon

Instructions

  1. Cook Ground Beef: In a large pot, cook and crumble the ground beef until no longer pink. Drain and set aside.
  2. Saute Vegetables: Melt 1 tablespoon of butter in the pot. Add carrots, celery, onions, basil, and parsley. Saute until tender.
  3. Add Potatoes and Broth: Add potatoes, cooked beef, and chicken broth. Simmer until potatoes are tender.
  4. Prepare Roux: In a separate pan, melt 3 tablespoons of butter, add flour, stir until bubbly. Mix into the soup and boil for 2 minutes.
  5. Finish Soup: Reduce heat, add Velveeta, milk, salt, and pepper. Once cheese melts, remove from heat. Stir in sour cream.
  6. Serve: Top with optional toppings and serve warm.

Notes

  • You can customize toppings with shredded cheese, diced tomatoes, or pickles.
