Butter:

4 tablespoons, divided

1 teaspoon

Dried Parsley:

1 teaspoon

Potatoes:

4 cups, diced

Chicken Broth:

3 cups

All-Purpose Flour:

1⁄4 cup

Velveeta:

1 to 2 cups, cubed

Whole Milk:

1 1⁄2 cups

Salt:

3⁄4 teaspoon

Black Pepper:

1⁄4 to 1/2 teaspoon

Sour Cream:

1⁄4 cup

Onion Rings, Green Onions, and Crumbled Bacon:

Instructions

  1. Cook Ground Beef: In a large pot, cook and crumble the ground beef until no longer pink. Drain and set aside.
  2. Saute Vegetables: Melt 1 tablespoon of butter in the same pot. Add carrots, celery, onions, basil, and parsley. Saute until tender.
  3. Add Potatoes and Broth: Put potatoes, ground beef, and chicken broth in the pot. Simmer until potatoes are tender.
  4. Prepare Roux: In a separate pan, melt 3 tablespoons of butter, add flour, and cook. Stir into the soup and boil for 2 minutes.
