Ingredients

Scale

Egg Mixture

  • 4 large eggs
  • ¼ cup milk
  • ½ teaspoon table salt
  • ¼ teaspoon black pepper

Filling

  • ¼ cup diced bell peppers (red and green combination)
  • ¼ cup diced onions
  • ¼ cup bacon, cooked, diced, and crumbled (can substitute diced sausage or ham)
  • ¼ cup mild cheddar cheese, freshly shredded (can substitute sharp cheddar, Monterey Jack, or pepper jack cheese)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray a donut-shaped muffin tin with cooking spray to prevent sticking.
  2. Mix Eggs: In a bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy.
  3. Prepare Muffin Cups: Evenly distribute the diced bell peppers, onions, and cooked bacon into each muffin cup of the prepared tin.
  4. Add Egg Mixture: Pour the egg mixture into each muffin cup, filling them about two-thirds to three-quarters full to allow room for expansion while baking.
  5. Add Cheese: Sprinkle shredded cheddar cheese evenly on top of each filled muffin cup.
  6. Bake: Bake in the preheated oven for 20 to 25 minutes, or until the omelet bites are set and lightly golden on top.
  7. Cool and Remove: Allow the bites to cool for a few minutes after baking, then gently run a butter knife around the edges to loosen and carefully remove them from the muffin tin.

Notes

  • Use a donut-shaped muffin tin for the classic shape, but a regular muffin tin can also be used.
  • Feel free to customize the fillings with different vegetables or meats according to your preference.
  • These omelet bites can be stored in the refrigerator for up to 3 days and reheated in the microwave.
  • For a dairy-free version, omit the cheese or use a dairy-free alternative.
  • Ensure the egg mixture doesn’t overfill the cups to prevent overflow during baking.
