Oatmeal Base:

  • 2 cups rolled oats (old-fashioned)
  • 1 cup all-purpose flour
  • 1 cup brown sugar (dark brown)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)

Rhubarb Filling:

  • 1 cup chopped rhubarb (fresh or frozen)
  • 1/2 cup water (if using fresh rhubarb)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. Mix Dry Ingredients: In a large bowl, combine oats, flour, brown sugar, baking powder, cinnamon, and salt.
  3. Add Butter: Pour in melted butter and mix until crumbly.
  4. Press Oat Mixture: Press two-thirds of the mixture into the pan for the base.
  5. Prepare Rhubarb: If using fresh rhubarb, toss with water and layer over the base.
  6. Add Remaining Mixture: Sprinkle the rest of the crumb mixture over the rhubarb.
  7. Bake: Bake for 30-35 minutes until golden brown.
  8. Cool and Serve: Allow to cool before cutting into squares.
