  • 1 lb ground beef (80/20)
  • 3 T taco seasoning (DIY or sugar-free store bought)

Egg Mixture:

  • ⅔ cup heavy whipping cream
  • 4 large eggs
  • ⅓ cup chunky salsa
  • 1 ¼ cup shredded cheddar cheese
  • ½ teaspoon garlic salt or salt + garlic powder
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 350F and position the rack in the center. Grease a 9″ pie pan and set aside.
  2. Brown Beef: In a skillet, brown the ground beef, draining any excess grease once cooked. Add taco seasoning and combine.
  3. Prepare Beef Layer: Spoon the taco beef into the greased pie pan.
  4. Mix Egg Mixture: In a small bowl, mix heavy cream, eggs, salsa, 1 cup of cheese, garlic salt, and pepper. Pour over the beef.
  5. Bake: Top with remaining cheese and bake uncovered for 35-40 minutes until set and golden.
