  • 250 g Icing Sugar
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat Oven and Prepare Tray: Preheat the oven to 175°C and line a baking tray with baking paper to prevent sticking.
  2. Mix Sugars and Butter: Whisk together brown sugar, sugar, and melted butter until smooth and well combined for a rich base.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla extract into the sugar-butter mixture and whisk thoroughly to combine.
  4. Sift and Fold Dry Ingredients: Sift the plain flour, cornflour, baking soda, baking powder, and salt, then fold into the wet mixture gently until combined into a dough.
  5. Shape and Chill Dough: Roll the dough into 50g balls, place them spaced on the prepared baking tray, and refrigerate for 1 hour to help control spread during baking.
  6. Bake Cookies: Bake refrigerated dough balls at 175°C for 12 minutes; allow cookies to cool completely on the tray before decorating.
  7. Prepare Cream Cheese Frosting: Whisk together softened butter, cream cheese, and icing sugar for about 5 minutes until fluffy, then add vanilla extract and whisk again.
  8. Add Colour and Decorate: Mix in food colouring if desired. Pipe frosting onto cooled cookies and finish with sprinkles for decoration.
