Sauce

  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar

  • Pinch of salt

Instructions

  1. Press the Tofu: Wrap the tofu block in paper towels and place a heavy object on top for about 15 minutes to remove excess water. This step ensures the tofu becomes crispy when cooked.
  2. Make the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and cornstarch until smooth. Set aside.
  3. Prepare the Tofu: Cut the pressed tofu into 1-inch cubes and lightly season with a pinch of salt.
  4. Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook for 5-7 minutes, turning occasionally until golden and crispy on all sides. Remove tofu from the pan and set aside.
  5. Sauté Aromatics: In the same pan, add the remaining 1 tablespoon of oil, minced garlic, and grated ginger. Stir-fry for about 30 seconds until fragrant.
  6. Cook the Vegetables: Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they become crisp-tender but still vibrant.
  7. Combine Tofu and Sauce: Return the tofu to the pan and pour in the prepared sauce. Stir continuously and cook for 2 minutes until the sauce thickens and evenly coats the tofu and vegetables.
  8. Garnish and Serve: Sprinkle sliced green onions on top to add a fresh, colorful finish to the dish. Serve hot over rice or noodles if desired.
