  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon dried mustard
  • 2 teaspoons paprika

For the Coating:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1½ teaspoons salt
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1½ teaspoons dried basil
  • 1½ teaspoons dried thyme
  • 1½ teaspoons onion powder
  • 1 teaspoon cayenne pepper

For Frying:

  • 4 cups Vegetable oil, enough for frying

  1. Season the Chicken: In a large bowl, season the chicken pieces with salt, pepper, garlic powder, dried mustard, and paprika. Mix well and pour buttermilk over the chicken, stirring to combine.
  2. Marinate: Refrigerate the chicken in the buttermilk for at least 1 hour or preferably overnight.
  3. Prepare Coating: In a shallow dish, mix flour, baking powder, salt, garlic powder, paprika, dried basil, dried thyme, onion powder, and cayenne pepper.
  4. Heat Oil: Heat vegetable oil to 340°F in a deep fryer or pot.
  5. Dredge and Fry: Dredge each chicken piece in the flour mixture, ensuring thorough coating. Fry in batches until golden brown and cooked through.
  6. Drain and Serve: Let the fried chicken drain on a wire rack to maintain crispiness before serving.
