4.9 from 18 reviews

These Crispy Baked Buffalo Chicken Taquitos are the perfect Game Night snack, combining tender shredded chicken tossed in spicy buffalo sauce with creamy cream cheese and cheddar, all wrapped in a golden, crunchy tortilla. They’re baked, not fried, for a healthier twist and served with cool ranch or blue cheese dressing for dipping.

Ingredients

Scale

Chicken Filling

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese

Taquito Wrap

  • 8 medium flour tortillas

Dipping Sauce

  • 1/2 cup ranch or blue cheese dressing
  • Olive oil, for brushing

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and prepare a greased baking sheet to hold the taquitos.
  2. Cook Chicken: Bake, boil, or sauté the chicken breasts until they reach an internal temperature of 165°F (74°C). Let the cooked chicken cool slightly, then shred it using two forks while still warm for easy mixing.
  3. Mix Filling: In a large bowl, combine the shredded chicken with buffalo sauce and softened cream cheese. Stir well until all ingredients are fully incorporated. Then fold in the shredded cheddar cheese evenly.
  4. Assemble Taquitos: Lay each flour tortilla flat on a clean surface. Spoon a generous line of the chicken mixture along one edge of the tortilla. Roll the tortilla tightly around the filling to form a taquito.
  5. Prepare for Baking: Place each rolled taquito seam-side down on the greased baking sheet. Lightly brush the outside of each with olive oil to promote crispiness during baking.
  6. Bake: Bake the taquitos in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside.
  7. Serve: Remove from the oven and let cool slightly. Serve warm with ranch or blue cheese dressing for dipping.

Notes

  • You can substitute cooked rotisserie chicken to save time.
  • Use corn tortillas for a gluten-free variation, though flour tortillas yield crispier results.
  • Adjust the amount of buffalo sauce to your preferred spice level.
  • Brush with cooking spray instead of olive oil for a lower fat option.
  • These taquitos can be made ahead and reheated in the oven to maintain crispiness.
