Pasta Sauce

  • 1 1/2 tablespoons butter, divided
  • 1 tablespoon all-purpose flour
  • 1/2 cup heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 1/4 cup dry white wine
  • 3 garlic cloves, minced
  • 1/2 cup grated Parmesan Reggiano Cheese
  • 1/2 teaspoon Italian Seasoning
  • Salt and pepper to taste

Shells and Filling

  • 20 jumbo pasta shells
  • 8 oz raw shrimp, peeled and deveined, chopped
  • 8 oz lobster meat
  • 8 oz cream cheese
  • 8 oz lump crab meat
  • 2 cups finely chopped fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan Reggiano Cheese
  • 1 1/2 teaspoons Old Bay Seasoning
  • Salt and pepper to taste

Instructions

  1. Prep your pasta shells: Boil shells until just shy of al dente.
  2. You don’t want them too soft since they’ll cook further in the oven.

  3. Whip up the cream sauce: Melt butter, whisk in flour, then add cream, milk, wine, garlic, Parmesan, and seasoning.
  4. Adjust to taste.

  5. Cook the seafood: Heat butter, cook shrimp and lobster until opaque.
  6. Avoid overcooking.

  7. Mix up the filling: Combine seafood, cream cheese, spinach, mozzarella, Parmesan, Old Bay, salt, and pepper.
  8. Adjust seasoning as needed.

  9. Assemble and bake: Fill shells with seafood mixture, place in baking dish, top with mozzarella, bake covered, then uncovered for a golden finish.
