  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red peppers, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained and sliced or whole

Instructions

  1. Melt Butter: In a large, heavy pan, melt butter over medium-high heat.
  2. Sear Chicken: Season chicken with salt and pepper, then add to the pan. Brown chicken on all sides, turning every couple of minutes, for about 8 minutes total.
  3. Cook Onions and Garlic: Remove chicken from the pan. Add garlic and onion, and let them brown for about 5 minutes.
  4. Add Stock and Peppers: Pour in the chicken stock and roasted red peppers. Let it reduce by half for another 5 minutes.
  5. Make Cream Sauce: Turn off the heat and slowly stir in the cream and Parmesan cheese, whisking vigorously. Slowly bring the heat back to medium-high.
  6. Final Steps: Add Italian seasoning, pepperoncini peppers, and chicken back to the pan. Let the sauce reduce and cook the chicken fully to 165°F internal temperature. Adjust the sauce consistency with more stock as needed.
  7. Serve: Remove from heat and serve over vegetables, pasta, rice, or enjoy it on its own!
