Ingredients

Scale

For the Tea

  • 4 cups water
  • 4 black tea bags
  • 3 star anise
  • 1 cinnamon stick
  • 2 whole cloves
  • 1/3 cup maple syrup (or less, to personal taste)
  • 20 drops stevia extract
  • 1/2 teaspoon vanilla extract

For the Coconut Milk Mixture

  • 2 cups Pacific Foods Organic Original Coconut Milk, chilled
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 vanilla bean, cut in half, seeds removed
  • Ice cubes, as needed

Instructions

  1. Prepare the Tea: Place 4 cups of water in a medium saucepan and bring to a boil. Remove from heat immediately and add black tea bags, star anise, cinnamon stick, cloves, maple syrup, stevia extract, and vanilla extract. Let the mixture steep for about 20 minutes to extract the flavors and allow it to cool.
  2. Strain and Chill the Tea: Strain the tea mixture through a fine sieve into a container to remove the tea bags and spices. Place the strained tea in the refrigerator until completely chilled.
  3. Make the Coconut Milk Mixture: In a bowl, whisk together the chilled Pacific Foods Organic Original Coconut Milk, maple syrup, vanilla extract, and the seeds scraped from the vanilla bean. Mix until well combined and creamy.
  4. Assemble the Iced Tea: Fill 4 to 5 glasses with ice cubes. Pour the chilled tea halfway to three-quarters full, then top each glass with the creamy coconut milk mixture to fill the remainder of the glass.
  5. Mix and Serve: Stir gently in each glass to combine the tea and coconut milk mixture before drinking. Serve immediately and enjoy the refreshing tropical flavors.

Notes

  • Adjust the sweetness by varying the amount of maple syrup and stevia according to your preference.
  • For a stronger tea flavor, steep the tea bags and spices for a longer time, but be cautious of bitterness.
  • Use chilled coconut milk for the best creamy texture and flavor contrast.
  • Vanilla bean seeds add a rich aroma, but vanilla extract alone works well if you don’t have fresh beans.
  • Serve immediately after assembling for the best taste and texture.
