Ingredients

Scale

Soup Base

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream

Main Ingredients

  • 3 medium potatoes, peeled and diced
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 stalk celery, diced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Optional Garnishes

  • Chopped fresh parsley
  • Grated cheddar cheese
  • Crumbled bacon

Instructions

  1. Prepare the Base: In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  2. Add Vegetables and Broth: Stir in the diced potatoes, carrots, and celery. Pour in the chicken broth, then season with salt, pepper, dried thyme, and paprika. Bring the mixture to a boil, then reduce to a simmer. Cook until the vegetables are tender, about 15-20 minutes.
  3. Blend for Creaminess: Use an immersion blender to partially blend the soup directly in the pot, leaving some chunks for texture. Alternatively, transfer about half of the soup to a blender, puree, then return to the pot.
  4. Add Chicken and Dairy: Stir in shredded cooked chicken, milk, and heavy cream. Heat gently over low heat until warmed through, making sure not to boil to avoid curdling.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning as needed. Ladle the creamy chicken and potato soup into bowls and garnish with fresh parsley, shredded cheese, or bacon if desired. Serve hot.

Notes

  • To make this soup quicker, use leftover rotisserie chicken.
  • For a thicker soup, use less milk or cream.
  • Use low-sodium chicken broth to better control salt level.
  • Immersion blender is preferred for partial blending to keep texture.
  • This soup can be stored in the refrigerator for up to 3 days.
