  • 1 ½ cups chopped pecans
  • ½ cup butter, melted

Cream Cheese Lemon Filling

  • 5 ounces evaporated milk
  • 3.4 ounces instant lemon pudding
  • 2 packages (8 ounces each) cream cheese
  • ¾ cup frozen lemonade concentrate

Blueberry Topping

  • 1 ½ cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Brown Sugar Pecan Crust – In a medium bowl, combine all crust ingredients. Spread mixture in a baking dish and press firmly. Bake and let cool.
  2. Cream Cheese Lemon Filling – Mix evaporated milk and pudding. Beat cream cheese until fluffy, then add lemonade concentrate and pudding mixture. Spread over crust.
  3. Blueberry Topping – Cook blueberries, sugar, lemon juice, and cornstarch until thickened. Cool and spread over lemon filling. Refrigerate for 4 hours before serving.
