For the Sweet Potatoes:

  • 2 small (or 1 large) sweet potato, peeled and cubed
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • Olive oil spray

For the Bowls:

  • 1/2 pound ground beef
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp chili flakes
  • 1/2 tsp salt
  • 1 cup cottage cheese
  • 1 avocado, cubed
  • 1/2 tbsp hot honey
  • Chili flakes, to taste

Instructions

  1. Prepare The Sweet Potatoes: Peel and cut the sweet potatoes into small cubes. Season with 1/2 tsp garlic powder, 1/2 tsp paprika, and 1/4 tsp salt. Lightly spray with olive oil and cook in the air fryer at 375°F (190°C) for 15 minutes, or until golden and tender.
  2. Cook The Ground Beef: In a skillet over medium-high heat, add the ground beef along with 1 tsp onion powder, 1/2 tsp garlic powder, 1 tsp paprika, 1/4 tsp chili flakes, and 1/2 tsp salt. Cook, stirring occasionally, until the beef is fully cooked and slightly browned.
  3. Assemble The Bowls: Divide the cooked sweet potatoes and ground beef evenly between two bowls. Add half of the cubed avocado to each, and top each bowl with 1/2 cup of cottage cheese. Drizzle with hot honey and sprinkle chili flakes to taste.

  • You can substitute ground turkey or chicken if you prefer a leaner meat option.
  • Adjust the amount of chili flakes and hot honey to control the spice and sweetness levels to your taste.
  • For a dairy-free version, replace cottage cheese with a vegan cheese alternative or omit it.
