Dough:

  • 2¼ teaspoons active dry yeast
  • ¾ cup warm water
  • ¼ cup sugar
  • ½ cup buttermilk
  • 1 egg
  • 3½ cups flour
  • 2 tablespoons melted butter

For Frying and Glaze:

  • Oil for frying
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1 teaspoon vanilla

Instructions

  1. Activate Yeast: In a bowl, activate the yeast in warm water with sugar. Mix in buttermilk, egg, butter, and flour. Let the dough rise for 1 hour.
  2. Roll and Cut: Roll the dough to ½-inch thickness and cut into squares.
  3. Fry: Heat oil to 350°F and fry the dough squares until golden, about 1-2 minutes per side.
  4. Make Glaze: Mix powdered sugar, milk, and vanilla to create the glaze. Dip the warm beignets in the glaze.

Notes

  • For a twist, sprinkle powdered sugar or cinnamon on top instead of the glaze.
  • Beignets are best enjoyed fresh and warm.
