  • 170g smooth peanut butter
  • 2 tbsp coconut oil (omit if using runny peanut butter)
  • 60ml maple syrup
  • 80g cornflakes or crunchy cereal of choice
  • Pinch of salt

For the Coating

  • 150g dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Combine wet ingredients: Add the peanut butter, coconut oil (if using), maple syrup, and a pinch of salt to a saucepan. Heat gently over low flame until everything is softened and combined smoothly.
  2. Mix in cornflakes: Remove the saucepan from heat and fold in the cornflakes until they are evenly coated with the peanut butter mixture.
  3. Set the mixture: Divide the mixture into moulds of your choice, such as small round moulds, or press it evenly into a loaf tin lined with baking paper.
  4. Freeze to firm up: Place the moulds or loaf tin in the freezer for about 2 hours or until the bites have set completely. Once set, carefully remove from the moulds or tin. If using a loaf tin, slice into bars.
  5. Melt the chocolate coating: Break the dark chocolate into a heat-proof bowl, add the coconut oil, and melt either in the microwave in increments of 10 seconds (stirring between) or over a double boiler until smooth and glossy.
  6. Coat the bites: Dip each set cornflake bite or bar into the melted chocolate, then place them on a baking paper-lined board or sheet to set.
  7. Chill to set chocolate: Transfer the coated bites to the fridge and chill until the chocolate hardens completely.
  8. Store and serve: Keep the bites stored in an airtight container in the freezer. Remove about 20 minutes before serving for best texture.

  • You can omit the coconut oil in the peanut butter mixture if you use runny peanut butter to avoid excess oiliness.
