  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

For the Noodles:

  • 8 oz egg noodles (or your favorite pasta)
  • 3 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning (or a mix of dried basil and parsley)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Noodles: In a large pot, cook the egg noodles until al dente, then drain and set aside.
  2. Cook the Chicken: Season chicken with salt and pepper, then cook in a skillet until golden and cooked through. Set aside.
  3. Make the Butter Sauce: In the same skillet, melt 2 tablespoons of butter, then add garlic and Italian seasoning; cook until fragrant.
  4. Combine and Serve: Add drained noodles and remaining butter to the skillet. Toss to coat, then add chicken back in. Sprinkle with Parmesan, garnish with parsley, and serve.
