Ingredients

Scale

For the Chicken:

  • 2 large chicken breasts (~1.5 lbs)
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1 cup grated parmesan cheese
  • 1/4 cup neutral oil, plus more as needed

For the Wrap Filling:

  • 1 large head romaine lettuce, chopped small
  • 1 cup croutons
  • 1 cup shredded parmesan cheese
  • 1/2 cup Caesar dressing
  • 4 extra large burrito wraps

Instructions

  1. Prepare the Chicken: Slice chicken breasts in half widthwise to create four thinner pieces. Pound each piece to about 1/4 inch thick using a meat pounder or rolling pin to ensure even cooking.
  2. Set Up Breading Stations: In three separate bowls, mix flour with salt and pepper in the first, whisk eggs in the second, and combine panko breadcrumbs with grated parmesan cheese in the third.
  3. Bread the Chicken: Coat each chicken piece thoroughly in the flour mixture on both sides, then dip into the egg, ensuring it’s fully covered. Finally, press each piece into the breadcrumb and parmesan mixture to coat both sides well.
  4. Cook the Chicken: Heat neutral oil in a large pan over medium-high heat. Cook two chicken pieces at a time for 4-5 minutes per side until the coating is golden brown and the chicken is cooked through. Transfer to a paper towel-lined plate to drain excess oil. Repeat with remaining pieces.
  5. Prepare the Salad Filling: In a large bowl, combine the chopped romaine lettuce, croutons, shredded parmesan cheese, and Caesar dressing. Toss everything well to distribute the dressing evenly.
  6. Combine Chicken and Salad: Slice the cooked chicken into bite-sized pieces and add to the salad mixture. Toss gently to mix.
  7. Assemble the Wraps: Divide the chicken Caesar salad mixture evenly among the four burrito wraps. Wrap tightly, cut each wrap in half, and serve immediately for best texture and flavor.

Notes

  • For extra crispiness, use fresh panko breadcrumbs instead of old or stale ones.
  • You can swap neutral oil for olive oil, but use light olive oil to avoid overpowering the flavor.
  • For a lower calorie option, consider grilling the chicken instead of frying.
  • Wraps can be prepared ahead and refrigerated, but assemble just before serving to keep the wraps from becoming soggy.
  • To make ahead, cook chicken fully and store separately from salad and wraps, combining all just before eating.
