Instructions

  1. Brown the Beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks to ensure even cooking.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes, stirring occasionally, until the onion softens and becomes fragrant.
  3. Add Potatoes and Seasonings: Add the diced potatoes to the skillet and sprinkle in salt, black pepper, paprika, and dried oregano. Stir well to evenly coat the potatoes and beef with the spices.
  4. Simmer with Broth: Pour in the beef broth and cover the skillet. Lower the heat to a gentle simmer and cook for 20-25 minutes, or until the potatoes are tender and the broth has mostly absorbed into the mixture.
  5. Melt the Cheese: Sprinkle the shredded cheddar cheese evenly over the beef and potatoes. Cover the skillet again and let it cook for 2-3 minutes until the cheese melts thoroughly.
