Brownies

  • 12 ounces semi-sweet or bittersweet chocolate chips
  • 6 tablespoons unsalted butter, cut into small cubes
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs, room temperature
  • ¼ cup unsweetened cocoa powder
  • ⅓ cup cornstarch
  • ½ teaspoon salt
  • 1 cup mini semi-sweet chocolate chips

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg, room temperature
  • 1/2 teaspoon vanilla extract

Instructions

  1. Brownies – In a large bowl, melt chocolate chips and butter. Stir in sugar and vanilla. Add eggs one at a time. Mix dry ingredients separately, then combine all and stir in mini chocolate chips. Pour two-thirds of the batter into a pan.
  2. Cheesecake Layer – Beat cream cheese until fluffy. Add sugar, egg, and vanilla. Spoon over brownie batter and spread. Top with remaining brownie batter. Bake and cool before cutting into squares.
