Caprese Crostini is a delightful appetizer featuring the classic Italian flavors of fresh tomatoes, mozzarella, basil, and balsamic. These bite-sized toasts are perfect for entertaining or as a light starter.

Ingredients

Scale

Crostini:

  • 1 long baguette, sliced into ½-inch thick rounds
  • Olive oil, for brushing

Toppings:

  • 23 Roma tomatoes, sliced into ¼-inch thick rounds
  • Fresh mozzarella cheese, sliced into ¼-inch thick rounds (match the size of your baguette slices)
  • Fresh basil leaves, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Bread: Preheat the oven to 350°F (175°C). Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for 5 minutes to create a lightly crisp base. This step helps prevent the bread from becoming soggy once topped.
  2. Assemble the Toppings: Place a slice of mozzarella cheese on each toasted baguette slice, followed by a slice of tomato. Sprinkle with salt and black pepper to taste.
  3. Bake the Crostini: Return the crostini to the oven and bake at 350°F for 8-10 minutes, or until the cheese has melted and the toppings are warmed through.
  4. Prepare the Basil Dressing: While the crostini are baking, combine 1 tablespoon balsamic vinegar and 1 tablespoon extra virgin olive oil in a small bowl. Stir until well blended. Add the thinly sliced basil and gently toss to coat.
  5. Finish and Serve: Once the crostini are out of the oven, top each one with a small amount of the marinated basil mixture. Serve immediately while warm.
