1 tbsp Cajun seasoning
1 tbsp olive oil
Salt and black pepper to taste
For the Pasta and Sauce:
10 oz rigatoni pasta
1 cup heavy cream
3/4 cup freshly grated Parmesan cheese
2 garlic cloves, minced
2 tbsp butter (divided)
1/2 cup shredded mozzarella or Fontina cheese (optional)
Instructions
Sear the Steak: Season steak tips with Cajun seasoning. Sear in olive oil and butter until browned. Set aside.
Cook the Pasta: Boil salted water, cook rigatoni until al dente, then drain.
Make the Sauce Base: Sauté garlic in butter, pour in cream, and simmer.
Add the Cheese: Melt Parmesan into the sauce. Add optional cheese. Season.
Combine: Toss rigatoni in sauce, adding pasta water. Fold in steak.
Serve: Plate, garnish with Parmesan and pepper.
