  • 10 oz rigatoni pasta
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tbsp butter (divided)
  • 1/2 cup shredded mozzarella or Fontina cheese (optional)

Instructions

  1. Sear the Steak: Season steak tips with Cajun seasoning. Sear in olive oil and butter until browned. Set aside.
  2. Cook the Pasta: Boil salted water, cook rigatoni until al dente, then drain.
  3. Make the Sauce Base: Sauté garlic in butter, pour in cream, and simmer.
  4. Add the Cheese: Melt Parmesan into the sauce. Add optional cheese. Season.
  5. Combine: Toss rigatoni in sauce, adding pasta water. Fold in steak.
  6. Serve: Plate, garnish with Parmesan and pepper.
