  • 2 boneless, skinless chicken breasts (cubed)

For the Alfredo Sauce:

  • 12 oz fettuccine pasta
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt & black pepper to taste
  • ½ cup diced tomatoes or bell peppers (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine until al dente. Reserve ½ cup pasta water, then drain and set aside.
  2. Sear the Chicken: Toss cubed chicken with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 4–5 minutes until cooked through. Remove and set aside.
  3. Make the Sauce: In the same skillet, melt butter over medium heat. Sauté garlic for 30 seconds. Add heavy cream and bring to a gentle simmer. Slowly whisk in Parmesan cheese until melted and sauce is smooth. Season with salt and black pepper.
